My mother in law Kitty Doyle (nee Dowdall) R.I.P, also know to her children and their friends as "Mrs" often cooked this meal. I fell in love with how simple but tasty it was and the very little washing up to be done afterward. My family still love when I prepare this meals & they chat over fond memories of their nana while hearing tales of their dads time growing up on the family farm (often about how he would find mischief).
This recipe was created in the times before convenience foods, when there was no such thing as sauces in a packet or jar - you had to make your own & the natural flavourings are so much better. I have added my own twist to it and invite you to do the same.

Serves 6 Adults

6 pork chops

4 Carrots - Cubed

4 Sticks of Celery - Cubed

2 Cloves Garlic - Crushed

1 Large White Onion - Finely Chopped

6 Large Peeled Potatoes (Roosters or Maris Piper are best) - sliced to about 1-1.5cm thick.

2 tblsp Butter

2 tblsp Plain flour (Substitute gluten free flour here if desired).

1 litre Milk.

2 Chicken or Veg Stock Cubes.

2 Bay Leaves
- 75g Grated Cheddar Cheese

Parsley

Salt and pepper.

Bring a pot of slightly salted water to the boil, add in potatoes & cook on medium high for 10-15 minutes.

While the potatoes are par-boiling, season the pork chops with salt, pepper and rub a stock cube over them front and back, place on a griddle pan for 10 minutes until seared.
- Preheat the oven to 180°C (350°F or Gas Mark 4).

In a casserole dish place chops layered with veg and parboiled potato slices. Continue ending with potatoes on top.

In a saucepan melt the butter, add in flour & cook while stirring for a few minutes, gradually add in milk and stir to make a creamy sauce, season to taste and add stock cube and bay leaves.

Pour the sauce into the casserole dish and bake in the middle of the pre-heated oven for approx 35 minutes, check if potatoes are cooked all the way through. Grate cheese onto top and place under the grill to melt for 5 minutes. Serve with your choice of vegetables.
