Black Bean Burgers

My daughter Beckha mad a lifestyle change to become vegetarian a long time ago. Since then, I have tried to develop vegetarian friendly versions of foods that she used to like in her pre-vegetarian days.

These burgers are reminiscent of a good quality black pudding - I will be working on getting this just right for a long time, but will continue to try new spice & herb combinations until I get it just right. I am trying for a similar texture & flavour to a nice round of Clonakilty pudding.

Vegetarian or not, I hope you will give this a try!

Serves 4

  • 1 Tin of Black Beans Drained & Rinsed
  • 2 Slices of Brown Bread
  • 1/4 Tsp Red Chilli Flakes
  • Salt & Pepper to Taste
  • 1 Clove of Garlic, Crushed
  • 1 Medium White Onion, Finely Chopped
  • 1 Vegetable Stock Cube
  • 1 Tablespoon Olive Oil
  • Small Bunch of Fresh Parsley, Chopped
  • 1/2 Cup Water
  • 1 Egg, Beaten

  • Preheat oven to 180°C.
  • Prepare all ingredients & combine together in a mixing bowl, mix until fully incorporated.
  • Place the patties on a lined baking sheet and place in the middle of the preheated oven for 20 minutes.
  • Enjoy in a Brioche Bun with Salad or with Pasta.
