My daughter Beckha mad a lifestyle change to become vegetarian a long time ago. Since then, I have tried to develop vegetarian friendly versions of foods that she used to like in her pre-vegetarian days.
These burgers are reminiscent of a good quality black pudding - I will be working on getting this just right for a long time, but will continue to try new spice & herb combinations until I get it just right. I am trying for a similar texture & flavour to a nice round of Clonakilty pudding.
Vegetarian or not, I hope you will give this a try!

- 1 Tin of Black Beans Drained & Rinsed
- 2 Slices of Brown Bread
- 1/4 Tsp Red Chilli Flakes
- Salt & Pepper to Taste
- 1 Clove of Garlic, Crushed
- 1 Medium White Onion, Finely Chopped
- 1 Vegetable Stock Cube
- 1 Tablespoon Olive Oil
- Small Bunch of Fresh Parsley, Chopped
- 1/2 Cup Water
- 1 Egg, Beaten

- Preheat oven to 180°C.
- Prepare all ingredients & combine together in a mixing bowl, mix until fully incorporated.
- Place the patties on a lined baking sheet and place in the middle of the preheated oven for 20 minutes.
- Enjoy in a Brioche Bun with Salad or with Pasta.
